Chipotle is building a way to spot a food safety problem before it gets out of hand, and it is doing so with Palantir. According to a WIRED report by Kate Taylor published on September 16, 2026, the chain is developing a “food safety risk platform” that runs on Foundry, Palantir’s flagship software platform. WIRED based the report on screenshots it viewed. Chipotle spokesperson Erin Wolford confirmed the project but declined to comment further. Palantir did not immediately respond to WIRED.

Judging by the screenshots, the system pulls several kinds of data for each restaurant into a single number:

  • health department scores;
  • pest incidents;
  • employee illnesses.

From these inputs the platform assigns each store a food safety score, which is in effect its risk level. It is not known when the partnership started or how widely the tool has been rolled out across Chipotle’s restaurants.

A bad year for food safety

The report lands after a rough 2026 for food safety in the US. The Food and Drug Administration has identified more than 12,800 illnesses tied to foodborne outbreaks in 2026, most of them from a massive cyclospora outbreak linked to iceberg lettuce. Chipotle doesn’t serve iceberg lettuce, so neither that outbreak nor the related recall hit it directly. In July 2026, however, the chain stopped serving jalapenos from one supplier as a precaution. That supplier was linked to a salmonella outbreak that went on to sicken more than 430 people.

Palantir’s growing food business

Chipotle isn’t Palantir’s first customer in food. The company has contracts with poultry and beef supplier Tyson, cereal maker General Mills and the independent purchasing co-op for Wendy’s. Companies use Foundry to manage inventory, automate ordering and delivery, and track their supply chains. At Wendy’s, for example, the software is used to spot likely ingredient shortages before they happen. On the government side, Palantir signed a $22 million contract with the FDA in 2022.

Commercial work has become a major part of Palantir’s business. Corporate customers now account for nearly half of its US business. In August 2026, the company reported US commercial revenue of $764 million for its most recent quarter, up 149 percent year over year.

The awkward part

Palantir is still best known for its government contracts, including work for Immigration and Customs Enforcement (ICE) and the Department of Homeland Security. In 2025, ICE awarded Palantir a $30 million contract to build a surveillance platform that tracked people self-deporting. That connection could be sensitive in the restaurant industry, where immigrants make up roughly a fifth of the workforce. Chipotle has its own history here. In 2010 and 2011, after an ICE audit, it fired hundreds of workers who weren’t eligible to work in the US. In 2025, CEO Scott Boatwright said it would be “naive” to think the Trump administration’s immigration crackdown would not affect Chipotle employees, “whether that’s directly or psychologically.”

Scoring every kitchen by risk may make sense from a safety standpoint. How staff will feel about Palantir software tracking illness reports in their stores is a separate question.
